Rosemary roasted almonds

Plain roasted almonds are a quick and healthy snack but with a little extra effort, you can make restauarant-quality roasted nuts at home every day.

Ingredients

  • 2 cups almonds
  • 1 tablespoon unsalted butter (can substitute top-quality margarine)
  • 2 tablespoons fresh rosemary leaves, finely chopped
  • 1½-2 teaspoons sea salt flakes, such as Maldon
  • 2 teaspoons honey
  • ½ teaspoon chilli powder or hot cayenne pepper
  • 1 tablespoon unsalted butter (can substitute top-quality margarine)

Method

Step 1

Preheat the oven to 180 degrees Celsius and line a baking tray with baking paper.

Step 2

Spread almonds over tray and roast for 10 minutes.

Step 3

Meanwhile, mix melted butter with rosemary, salt, honey and cayenne pepper in a medium bowl.

Step 4

Tip roasted almonds into butter mixture and stir well until fully combined.

Step 5

Serve immediately or allow to cool and store in an air-tight container.
