Ingredients

  • ½ cup water
  • 1 cup white sugar
  • 2 cups whole almonds
  • sea salt flakes

Method

  1. Line a baking tray with baking paper, set aside.
  2. Place water and sugar in a large non stick fry pan, heat to dissolve sugar.
  3. Add the almonds, bring to the boil and continue to stir.
  4. When the syrup turns to crystals, continue to cook over heat and stir continuously.  The sugar crystals will gradually turn into a dark toffee.
  5. Keep stirring till all the almonds are coated in the toffee.
  6. Using caution – carefully tip the hot toffee almonds onto the lined baking tray, using a couple of forks, separate the almonds out.
  7. Do not touch the toffee as it will burn.
  8. While still hot and sticky, sprinkle with sea salt flakes.
  9. Leave to cool completely before packing in storage.

Salted caramel almonds keep well in an airtight container and make a great edible gift.
