Smoked trout and almond salad

The secret to continued fascination with those leafy greens? Make sure you have 1 – 2 “feature” ingredients in your daily bowl. This recipe is all about livening it up with the satisfying crunch of almonds and distinct flavour of smoked trout.



  • Mixed lettuce leaves
  • 6 roma tomatoes, sliced
  • 2 tablespoons capers, rinsed
  • 350g smoked trout
  • 100g whole almonds


  • ¾ cup apple vinegar
  • 2 tablespoons mustard oil
  • 2 tablespoons sweet chilli sauce
  • 50g flakes almonds, toasted


Step 1

Place the salad ingredients into serving bowls.

Step 2

Combine the dressing ingredients in a cruet or screw topped jar; shake or whisk to combine.

Step 3

Toss salad with dressing before serving.
