Ingredients
½ small red cabbage, finely shredded
2 green apples, julienned with skin on
½ cup finely sliced celery
½ cup sliced spring onions
¾ cup smoked whole almonds, roughly chopped
Dressing
½ cup mayonnaise
¼ cup sour cream
1/3 cup blanched almond meal
Juice of 1 large lemon
Sea salt flakes and cracked black pepper to taste
Method
Place prepared cabbage, apples, celery and spring onions in a large bowl.
Mix together the dressing ingredients then toss through the cabbage mix.
When ready to serve, pile the slaw onto a serving platter and scatter with smoked almonds.
The perfect salad to serve with a bbq or in slider rolls with your favourite pulled meat.
